The Amapola is on the strip in Esperanza.  The thing that struck me is that this cute, simple open air restaurant never seems to have a great deal of business during the day, but it is packed at night.  The problem during the day is that the view of the water is partially obstructed.  The food and service are excellent and the decor is nice.
     If you are looking for a place without crowds during the day this is a real find.  The view is still good and  the service (of course) will be very attentive.  We ate here for lunch more than once during our short stay and were always delighted. Try the "Jerked Chicken" for lunch - one of the best on the Island. Dinner is also excellent of course.
